Department of Dumb Questions / "Why would one care?" questions

OK, indulge me.

I have here a simple P&S, a Canon Prima Jr. Lens is 32mm, f5.6. Fixed shutter speed of 1/125.

The Canon Camera Museum website describes the camera as a "Fully automatic 35mm Lens-Shutter fixed-focus camera." Also: "CdS cell with full-auto simple program EE."

No doubt there are many similar simple point and shoot cameras from that era.

My question: Does the "program EE" on this (type of) camera actually cause the aperture to stop down in bright conditions? How simple are these types of auto EE systems? One step only - say to f/11 if the amount / brightness of light exceeds a given value? (I would think that one step probably is sufficient for most purposes, in a cheap P&S.)
